Incomplete copy: ff. 4b-47 only (of 53). 20.1 x 14 cm. Fukurotoji. Blockprint. Printing frame 18.1 x 13.1 cm. (average). Single-line borders. No rules bordering hanshin. No fishtail design on hanshin. Hiragana-majiri text, with dakuten but few furigana. 12 lines to page, variable no. of characters to line. Original dark brown covers, with vestiges of old title slip. Gedai missing. No naidai among surviving folios. Hashiragaki: Ryōri 料理 + folio no. Edition: Difficult to establish edition in the absence of kanki or other form of colophon. The first edition, published in Kan'ei 20 寛永二十年 (1643), appears to be of larger size than the present copy. Nor does it belong to the Kanbun 4 寛文四年 (1664) edition, which has 37 folios only. It is presumed, therefore, to be of the Shōhō 4 正保四年 (1647) or Keian 2 慶安二年 (1649) edition. Contents: A manual of cookery, one of the earliest known in Japan, divided into 20 sections dealing with the preparation and cooking of sea fish, seaweed and other plants, freshwater fish, poultry, etc.
