Scope and Content
Administrative / Biographical History
Bread was central to the formation of early human societies, it was a staple food made by mixing dough in a wooden trough, kneading then baking. Early bakeries used small 'beehive' direct fired ovens heated by lighting a fire in them. When the oven was hot enough the fire was drawn, or taken out and the batch inserted.
